Monday Morning Trader Joe’s Recipe

Good morning! Here is a tasty recipe from Trader Joe’s for a wonderful Vanilla Pineapple Upside Down Cake.  Hope you enjoy!

Vanilla Pineapple Upside Down Cake

Ingredients

  • 1 package TJ’s Vanilla Cake Mix
  • 1 1/4 stick TJ’s Unsalted Butter
  • 2 TJ’s Eggs
  • 1 cup Milk
  • 4 tbsp TJ’s Organic Brown sugar
  • 2 cups TJ’s Frozen Pineapple Tidbits

Instructions

Preheat oven to 350°. In a large mixing bowl, combine 1 stick of butter, 2 eggs, and milk with the Vanilla Cake Mix; set aside. In a small saucepan over medium heat, combine the brown sugar and remaining 1/4 stick of butter; mix until all the brown sugar has dissolved (about 5 minutes). Carefully pour the syrup into the bottom of a cake pan, lay the pineapple pieces over the syrup, and then fill with the cake mix. Place inside the oven for 40 to 50 minutes, or until you can pierce the center with a toothpick, and have it come out clean (also you can give it a quick shake; if it jiggles like gelatin, give it more time). Let cool, then stand on your head and enjoy! (Joking.) Carefully put a plate over the cake pan and flip it over so the pineapples are on top- now it’s time for serious enjoyment.

Serves: 5 – 6

Back-To-School Tips

It’s hard to believe fall is almost here and it will be back to school time.  So let’s get ready to begin adjusting to the new routine with some tips that On The Go Concierge has found to make everyone’s life easier.

  • Start limiting TV and encouraging more reading.
  • Check your school’s websites for updates.
  • Help you children start getting to bed earlier and waking up earlier the week before school begins.
  • Complete any needed medical, dental and eye-care appointments as soon as possible.  Don’t cause unnecessary absences.
  • Know the school bus route and schedule.
  • Adjust your budget to consider changing school fees or the costs of lunches, transportation, or activities.
  • Find out about dress codes before you shop.
  • Go through your children’s clothes with them.
  • Don’t shop the day before school starts.  Many stores have back-to-school sales so shop early for the widest selection.  If back-to-school shopping at crowded malls tends to leave you feeling tense and exhausted consider doing some shopping through catalogues or online.
  • Pick out clothes the night before and assemble outfits on hangers.
  • Call your childcare provider at least a week before school starts to review your arrangement.
  • Make a list of everything you need to do before school starts.
  • Label everything that your child will be taking to school.
  • Put up a family calendar in a central place.
  • Give each family member a place to store things for school and work.
  • Buy a special folder with sections or another filing system to help organize school papers and all the forms you’ll need to fill out.

Monday Morning Trader Joes Recipe

Happy Monday!  I just found my next party side dish…..Crab Dip Supreme via Trader Joe’s!

Crap Dip Supreme

Ingredients

  • 1 package TJ’s Whipped Cream Cheese
  • 1 jar TJ’s Cocktail Sauce
  • 1 can (about 1 lb) Refrigerated Crabmeat
  • TJ’s Pita Crackers or TJ’s French Bread, sliced

Instructions

Soften the cream cheese, and mix in the cocktail sauce and crabmeat. Refrigerate for about one hour before serving. Complete by spreading atop crackers or bread. Enjoy!

Serves: 10 – 12
Cooking Time: 60 Minutes

Monday Morning Trader Joe’s Recipe

Happy Monday! This is for anyone out there who likes Irish Soda Bread.  This is Trader Joe’s version and its called Millers Irish Soda Bread and my boys loved it!  Enjoy!

Millers Irish Soda Bread

Ingredients

  • 3 cups TJ’s Flour, sifted
  • 3 teaspoons Baking Powder
  • 1/4 teaspoons TJ’s Salt
  • 1/2 cup TJ’s Sugar
  • 1 cup TJ’s Thompson Raisins
  • 1 TJ’s Egg
  • 1 1/4 cup TJ’s Milk
  • 2 tablespoons TJ’s Unsalted Butter, softened

Instructions

Mix (by hand) all dry ingredients together in one bowl, egg and milk in another bowl. Mix wet and dry together, then add butter. Pour into a greased 8″ baking dish, sprinkle sugar on top and bake at 375 degrees (350 degrees for glass) for 45 – 60 minutes. Let cool… if you can. Enjoy!

Serves: 10
Cooking Time: 45 – 60 Minutes

Monday Morning Trader Joe’s Recipe!

Good morning!  I hope everyone had a wonderful weekend!  I know I did!  I found this great recipe for corn on the BBQ, I had never thought of keeping some of the husk on the corn so I will be giving this recipe a try on Wednesday.  Enjoy and happy Monday!

With Liberty and Grilled Corn for All!

Ingredients

  • 6 TJ’s Corn on the Cob
  • 6 tablespoons TJ’s Butter, TJ’s Garlic & Herb Butter or TJ’s Cilantro Salad Dressing
  • TJ’s Salt Grinder, to taste
  • TJ’s Pepper Grinder, to taste

Instructions

For each cob, remove two or three outer layers of the husk. A few layers should remain to protect the corn as it cooks, but not all of it is needed. Gently pull down the remaining husks to expose the corn and the silk. Remove as much of the silk as is possible. Place husks back over the ears and rinse thoroughly with water, making sure to get the husks good and wet. If desired, gently pull away the husks once again to expose the corn and coat/baste with a tablespoon of softened butter (regular or herb) or cilantro dressing. Fold the husks back into place and line up all the corn on a sturdy sheet of aluminum foil. Place the foil directly on the grill over medium-high heat. Grill for about 20 minutes, turning frequently, but allowing the husks to get nice and charred. Carefully remove from grill and let cool a minute or two before serving.

Serves: 6 – 12
Cooking Time: 20 – 30 Minutes
