Ok, so this recipe is not going to be so great for the waistline, but it sure looks good!  Enjoy!

Pumpkin Swirl Truffle Brownies

Ingredients

  • 1 box TJ’s Brownie Truffle Baking Mix
  • 1 box TJ’s Pumpkin Bread and Muffin Mix
  • 4 large TJ’s Eggs
  • 1 stick (4 oz.) TJ’s Unsalted Butter
  • ½ cup TJ’s Canola Oil
  • 1 cup Water
  • 1 quart Pilgrim Joe’s Pumpkin Ice Cream

Instructions

Preheat oven to 350º F. In a large mixing bowl, prepare Brownie Truffle Baking mix according to package directions. In another large mixing bowl, prepare Pumpkin Bread Mix according to package directions. Pour brownie mixture into a greased 9″ x 12″ baking pan and spread across pan. Pour the pumpkin mixture over the brownie mixture, and with a large stiff spatula swirl the two mixes together to make a marble effect. Place in oven and bake for 40 minutes, or until toothpick inserted in center comes out clean. Allow to cool, cut and serve with a scoop of Pumpkin Ice Cream!

Monday Morning Trader Joes Recipe

Good morning!  Cooler weather is on the way, but this Buffalo Chicken Panini will help keep you warm!  Enjoy!

Buffalo Chicken Panini

Ingredients

  • 1 package TJ’s Pulled Chicken in BBQ Sauce
  • 1/4 cup TJ’s Low Fat Mayonnaise
  • 2 tbsp TJ’s Light Sour Cream
  • 1/4 cup TJ’s Crumbled Blue Cheese
  • 1 TJ’s Green Onion (white and light green parts), finely chopped
  • 1 stalk TJ’s Organic Celery Hearts, trimmed and thinly chopped
  • 1 pinch (each) TJ’s Sea Salt and Black Pepper, freshly ground, to taste
  • 4 TJ’s Panini rolls
  • TJ’s Butter

Instructions

Heat a heavy skillet over medium heat. In a bowl, mix together the mayonnaise, sour cream, blue cheese, celery and green onions. Season the mixture with salt and pepper. Slice the rolls in half and butter each slice on the outside. Spread blue cheese dressing on the inside of each roll. Pile the chicken on the bottom half of the roll and cover with the top half. Place in the hot skillet and press down with a heavy spatula or small heavy pan for about 2 minutes. Flip and press down for an additional 2 to 3 minutes. Serve and – Enjoy!

Monday Morning Trader Joes Recipe

Happy Monday! Cooler days are heading our way and this pasta recipe from Trader Joes seems perfect for those evenings.  Hope you enjoy!

Easy Pasta Bake

Ingredients

  • 1 package TJ’s Whole Wheat Penne Pasta
  • 2 jars TJ’s Traditional Marinara
  • 2 containers TJ’s Fat Free Ricotta Cheese
  • 1 bag TJ’s Frozen Spinach, thawed and squeezed of excess moisture
  • 1 1/2 cups TJ’s Quattro Formaggio Shredded Cheese

Instructions

Preheat oven to 350 degrees . Spray a 13” x 9” baking dish with olive oil. Cook pasta according to package directions. When pasta is cooked, drain well and pour it into a prepared baking dish. Add both marinara jars, the ricotta and spinach and stir until the sauce is evenly distributed. Cover with foil and bake for 25 minutes. Remove the dish from the oven, take off the foil and sprinkle on the shredded cheese. Place under the broiler for about 5 minutes or until cheese is melted and golden.

Serves: 8 – 10
Cooking Time: 25 – 40 Minutes

Monday Morning Trader Joe’s Recipe

Good morning and Happy Monday to all!  Since my family is still in the mood for summer I thought I would give these Pulled Pork Tacos a try.  Have a great week!

Pulled Pork Tacos

Ingredients

  • 1 package TJ’s BBQ Pulled Pork
  • 1 package TJ’s Taco Shells
  • 1 can TJ’s Organic Black Beans
  • 1 container TJ’s Sour Cream
  • 1 package TJ’s Mexican Blend Shredded Cheese
  • 1 package TJ’s Green Onions, diced

Instructions

Cook pork and taco shells according to package instructions. Heat beans, if desired. Layer pork, black beans, sour cream, cheese and green onions into taco shells. Serve!

Serves: 6
Cooking Time: 10 – 15 Minutes

Monday Morning Trader Joe’s Recipe!

Good morning!  I hope everyone made it thru the hurricane with no major damage and all is well.  I found this new spin on deviled eggs, Cobb Salad Stuffed Eggs, and thought I would give it a whirl!  Let me know what you think.  Have a great Monday!

Cobb Salad Stuffed Eggs

Ingredients

  • 1 package TJ’s Hard Cooked Egg
  • 2 tablespoon TJ’s Avocado’s Number Guacamole
  • 2 strips of TJ’s Grilled Chicken Breast Strips, diced
  • 1 package TJ’s Grape Tomatoes, diced
  • 4 pieces TJ’s Uncured Turkey Bacon, cooked
  • 1 bag TJ’s Organic Romaine Lettuce

Instructions

Slice eggs in half lengthwise and scoop yolks into a bowl. Mash yolks and stir in guacamole and diced chicken. Spoon yolk mixture into egg halves. Layer lettuce leaves on a platter and arrange stuffed eggs on top. Sprinkle diced grape tomatoes and crumbled bacon on top of eggs. Serve chilled.

Serves: 8 – 12
Cooking Time: 5 – 10 Minutes
